The pretzel is a traditional Alsatian and German savory pastry.
Made from brioche dough, poached in a baking soda solution, in the shape of a knot or interlaced arms, and covered with pieces of coarse salt.
Make your own Alsatian pretzels using the pastry kit.
10 to 12 pretzels
Composition:
Wheat flour type 55 - sodium bicarbonate # - fine salt - coarse salt - dehydrated baker's yeast - emulsifier E491.
Additional products needed:
Water - 75 g butter or margarine # at room temperature - 1 egg
Preperation :
To the robot:
Put pockets 1 & 2 in the bowl of your food processor.
Add 270 ml of water and 75 g of fat.
Beat 3 minutes at slow speed then 6 minutes at medium speed.
The dough should be soft and elastic
Recipe idea:
You can also, before cooking, sprinkle your pretzels with poppy seeds, sesame seeds, linens…. or grated cheese and bacon, cheese, ...
Let your ideas run free:
do not hesitate to shape your pretzels much smaller or much larger. In Alsace we also decline them in moricettes:
a roll of about 60 g which we then garnish like a small sandwich.
Recipe Stuffed pretzel ball

Thus, we suggest you below to make filled balls which will make you a great evening meal for example.
Ingredients to make 12 pieces:
1 pretzel kit
75 gr of butter or margarine
some water
1 egg
For garnish
12 eggs
white ham (or smoked ham, salmon, tuna ... whatever you want)
some ketchup
a little cream
grated cheese
salt pepper
As mentioned on the kit, prepare your dough. When the dough is soft, divide into 12 identical pieces. Form balls. Place these balls on a baking sheet covered with baking paper. Leave to rise for about 1 hour. Preheat your oven to 190 °. Meanwhile, using the golden beaten egg your balls.
Cook for about 10 to 12 minutes.
Let cool.
Once cold, cut the "lid" of each ball and, using a spoon, empty the inside. Once the crumb is removed, put a drop of ketchup, break an egg, put a few diced ham, a little cream and cover with grated cheese. Baked in a hot oven for about 10 minutes.
Served with a green salad, it's a treat!
